Food Safety

Overview
Investigation will aim to give answers to the problems derived from the use of veterinary drugs and pesticides. Residues of these chemicals in food commodities constitute a risk for the public health. To ensure high level of protection of human health and consumer’s interests, more efficient analytical methods need to be developed to ensure that food arriving to the consumer is in compliance with the regulations. On the other hand, foodborne pathogens are contemplated as an important risk for the population.

Antibiotic residues

Due to their availability and low cost, antibiotics have been widely used in the dairy, livestock, poultry, aquaculture and honey production industries in various countries around the world. There is a risk that these residues will arrive to the consumer causing toxicological problems if present at concentrations over the maximum residue limits (MRL) established by the EC. Moreover, there is the associated risk of the antimicrobial resistance. Microbiological screening methods and chromatographic procedures cannot respond to the high number of samples to be analyzed with the necessary speed.

Hormones

The use of hormones to increase meat production in farm animals is completely prohibited in the EC. In spite of the controversies between US and Europe, several scientific reports have concluded that residues of the hormones in food constitute a risk to human health. Since no MRL or acceptable daily intake (ADI) has been established, the levels of these hormones in food products should be zero. A demand for high-throughput analytical methods reaching very low detection limits is evident.

Pesticides

The use of pesticides in food production inevitably leaves residues. Intensive production of food products will continue or even increase the use of chemicals to control pests. Consequences of the long-term exposure to low doses of multiple pesticide residues raise important concerns between the health authorities. Residues in food can arise from legally allowed but inappropriately used pesticides, although illegal use may also occur.

Microorganisms

Foodstuffs of animal and plant origin may present intrinsic hazards, due to microbiological contamination. It is necessary to ensure microbiological safety and quality of foods according to the criteria established by the EC. The actual microbiological tests do not provide the necessary speed and sensitivity to ensure food safety. On the other hand PCR-based methods are expensive and also need a significant time to provide a response.
